Chicken, Apple, and Cheese Quesadilla
If you have leftover chicken from last night’s dinner, use some of it to make this easy lunch. Place ½ cup of shredded cheese (mozzarella is my personal favorite, although cheddar works fine too) on a tortilla, add chicken and apple, and top with another ¼ cup of cheese. Add another tortilla on top and microwave for 30 seconds, or until cheese is melted and bubbly. Slice and eat.
